For now the 5600X would be a perfect pair for RTX 3070 from a budget point of view.On the other hand I would say that you should go for the Ryzen 5 5600X if you plan on playing games which are bit more CPU intensive such as Minecraft, League of Legends etc. It costs just 70 USD more than the 3600, hence I think that spending that cash on the CPU would be more sensible if you’re leaning towards single player as well as online multiplayer.
So one could also argue that the 3600 a bit more cheaper option; which is true and could work for you if you’re planning to play more single player games such as Assassins Creed Valhalla, Red Dead Redemption 2 etc.

The Ryzen 5 5600X has a greater edge over the Ryzen 5 3600 especially for CPU intensive games such as League of Legends, Minecraft etc. If your sole purpose is playing single player games, then I would suggest you to should go for the 5600X as it is defintely worth those extra bucks of yours.
Another one of my reasons to choose Ryzen 5 5600X is the ‘compatibility factor’ with games. Although it runs perfectly with the current games, this might not stand true for the next-games. Hence you should be better off with a 5600X rather than a 3600 from a “future proofing” point of view.
